  • 400 g dried pasta shapes (like rigatoni)
  • 1 large red onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 courgette (zucchini)
  • 2 cloves garlic
  • 2 x 400 g tinned chopped tomatoes
  • 120 ml double cream
  • 100 g strong cheddar cheese
  • 100 g mozzarella cheese
  • Fresh baby spinach

Instructions

  1. Preheat the oven to 190C/375F.
  2. Cook the pasta in boiling water for one minute less than package instructions; drain.
  3. Sauté chopped onion in vegetable oil for 3-4 minutes until softened.
  4. Add bell peppers, courgette, garlic, and seasonings; cook for another 2-3 minutes.
  5. Stir in chopped tomatoes and cream; simmer gently to meld flavors.
  6. Combine cooked pasta and baby spinach with the veggie sauce.
  7. Transfer to a baking dish, top with grated cheeses, and bake for 20-25 minutes until golden brown.
  8. Garnish with torn parsley before serving.
