  • 16 jumbo shells
  • 1/2 cup raw cashews
  • 1/2 block firm tofu
  • 2 tablespoons lemon juice
  • 1 tablespoon nutritional yeast
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons Califia Farms Oat Milk
  • 9oz package frozen spinach, thawed
  • 16oz marinara sauce
  • Optional: fresh basil, shredded dairy-free cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Soak cashews in boiling water for 10-15 minutes.
  3. Cook jumbo shells al dente as per package instructions.
  4. Blend soaked cashews, tofu, lemon juice, nutritional yeast, salt, pepper, and oat milk until smooth.
  5. Fold in thawed spinach until combined.
  6. Spread half the marinara sauce in a casserole dish.
  7. Fill each shell with the mixture and place into the dish. Cover with remaining sauce.
  8. Optional: Sprinkle dairy-free cheese on top.
  9. Cover with foil and bake for 30 minutes. Remove foil during the last 5-10 minutes if using cheese.
