  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 2 tablespoons light corn syrup
  • 10 oz vegan marshmallows (approximately 35 marshmallows)
  • 1 teaspoon vanilla extract

Instructions

  1. Pop the popcorn using your preferred method until you have about 12 cups. Set aside.
  2. In a saucepan over medium heat, melt the unsalted butter. Stir in brown sugar and light corn syrup. Bring to a simmer while stirring constantly for about 5 minutes until smooth.
  3. Add the vegan marshmallows to the caramel mixture and stir until fully melted and combined.
  4. Pour the caramel-marshmallow sauce over the popped popcorn and gently toss to coat evenly.
  5. Spread the coated popcorn on a parchment-lined baking sheet and bake at 250°F (120°C) for 30 minutes, stirring every 10 minutes.
