Ingredients

Scale
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 4 salmon fillets
  • Salt and pepper (to taste)
  • 2 cloves garlic (minced)
  • 34 sun-dried tomatoes (sliced)
  • 125ml grape juice
  • 250ml heavy cream
  • 50g grated Parmesan cheese
  • 30g fresh spinach

Instructions

  1. Sear the Salmon: Season salmon fillets with salt and pepper. In a frying pan over medium-high heat, melt butter and olive oil. Cook salmon skin-side up for 6-7 minutes until golden brown. Remove and set aside.
  2. Prepare the Sauce: In the same pan, sauté minced garlic and sun-dried tomatoes for about 30 seconds until fragrant. Deglaze with grape juice, simmering until reduced by half.
  3. Make It Creamy: Stir in heavy cream and grated Parmesan cheese until smooth. Add fresh spinach and let wilt into the sauce.
  4. Combine: Return the salmon to the pan, allowing it to warm through in the sauce before serving.
