  • 2 tbsp extra-virgin olive oil
  • Kosher salt (to taste)
  • Freshly ground black pepper (to taste)
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 1 1/2 cups halved cherry tomatoes
  • 2 cups baby spinach
  • 1/2 cup heavy cream
  • 1/4 cup freshly grated Parmesan
  • 1/4 cup chopped herbs, plus more for garnish
  • Lemon wedges for serving

Instructions

  1. In a skillet over medium-high heat, add olive oil. Season salmon fillets with salt and pepper, then place them skin-side down in the skillet. Cook for about 6 minutes until golden brown, flipping after 2 minutes.
  2. Lower the heat to medium and add butter. Stir in minced garlic and sauté until fragrant (about 1 minute). Add cherry tomatoes and season again with salt and pepper, cooking until they burst.
  3. Fold in baby spinach until wilted. Pour in heavy cream and add Parmesan; stir everything together as it simmers gently.
  4. Return salmon to the skillet, spooning sauce over them while simmering for another 3 minutes.
  5. Garnish with herbs and serve with lemon wedges.
