  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp pumpkin pie spice
  • 1/2 tbsp fresh thyme
  • 1/2 tbsp fresh oregano
  • 1/2 tbsp fresh sage, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse and dry the mini pumpkins. Cut off the tops and scoop out the seeds.
  3. In a pan over medium heat, sauté the onion and garlic in olive oil until fragrant.
  4. In a bowl, mix sautéed onion and garlic with ground beef, pumpkin puree, spices, and herbs until well combined.
  5. Grease a baking dish and place the pumpkins inside. Fill each with the stuffing mixture.
  6. Roast in the oven for 30-35 minutes until tender.
