  • 2 tbsp butter, melted
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1/4 tsp chili powder (optional)
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 avocado, diced
  • Hot sauce, to taste (optional)
  • Lime wedges, for serving

Instructions

  1. In a bowl, combine cubed chicken with olive oil and spices; mix well.
  2. Cook seasoned chicken in a skillet over medium-high heat until golden brown and fully cooked.
  3. Prepare corn by grilling or roasting until tender; cut kernels off the cob.
  4. In another bowl, mix corn with mayonnaise, sour cream, cheese, cilantro, lime juice, and chili powder.
  5. Cook rice in water with olive oil and salt until fluffy.
