Ingredients

Scale
  • 2 ribeye or sirloin steaks (8 oz each)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder (optional, for extra flavor)
  • 1/2 cup fresh parsley, packed
  • 1/4 cup fresh cilantro
  • 1 tablespoon fresh oregano (or basil)
  • 2 tablespoons fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili flakes (optional, for heat)
  • Salt and pepper, to taste
  • 2 large sweet potatoes, peeled and cut into chunks
  • 1/4 cup unsalted butter (or olive oil for dairy-free)
  • 1/2 cup heavy cream or coconut milk (for a dairy-free option)
  • Salt and pepper, to taste
  • 1/4 teaspoon cinnamon (optional, for extra flavor)

Instructions

  1. Boil peeled and chopped sweet potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter (or olive oil) and cream (or coconut milk).
  2. Season both sides of the steaks with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium-high heat and cook steaks for about 4-5 minutes per side for medium doneness. Let rest.
  3. In a blender, combine fresh herbs, lemon juice, olive oil, apple cider vinegar, minced garlic, chili flakes, salt, and pepper to create the green sauce.
  4. Plate mashed sweet potatoes topped with steak slices and drizzle with the green sauce.
