  • 1 teaspoon milk (for filling)
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, and pumpkin spice.
  3. In another bowl, mix pumpkin puree, vegetable oil, eggs, and vanilla until smooth.
  4. Gently combine the wet ingredients with the dry ingredients until just mixed.
  5. For the cream cheese filling, beat cream cheese with sugar, flour, milk, and vanilla until smooth.
  6. Fill muffin liners halfway with batter, add a dollop of cream cheese filling, then top with more batter.
  7. Bake for about 25 minutes or until a toothpick comes out clean.
