  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • Salt and pepper to taste
  • 4 slices cooked turkey bacon
  • 1 ripe avocado, sliced
  • 2 slices pepper jack or cheddar cheese
  • ¼ cup pickled jalapeños
  • 2 brioche buns, toasted
  • ¼ cup mayonnaise
  • 1 tbsp adobo sauce
  • ½ tsp lime juice

Instructions

  1. Pound chicken breasts to even thickness; rub with olive oil and seasonings.
  2. Grill chicken on medium-high heat for about 4–5 minutes per side until internal temperature reaches 165°F (74°C). Add cheese during the last minute of cooking.
  3. Mix mayonnaise, adobo sauce, and lime juice in a bowl to make chipotle mayo.
  4. Lightly toast brioche buns until golden brown.
  5. Assemble by spreading chipotle mayo on both sides of each bun; layer with avocado slices, grilled chicken with melted cheese, turkey bacon strips, and jalapeños.
