  • 8 mini or Persian cucumbers
  • 1 green onion (finely sliced)
  • Sesame seeds
  • 1 ½ tbsp low-sodium soy sauce
  • 1 ½ tbsp rice vinegar or white apple vinegar
  • 1 tsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 large garlic cloves (minced)
  • 1 tsp crushed red chili flakes

Instructions

  1. Wash and trim the cucumbers. For accordion slices, place a cucumber between two chopsticks and cut diagonally at a 45° angle without cutting all the way through. Flip it over and slice at a 90° angle.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or maple syrup), minced garlic, and red chili flakes.
  3. In a large mixing bowl, combine the prepared cucumbers and pour the dressing over them. Toss gently until well coated.
  4. Garnish with sliced green onions and sesame seeds before serving.
