  • 1 sheet puff pastry, thawed
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 10 oz cremini mushrooms, sliced
  • 1 teaspoon fresh thyme leaves (or 1/2 tsp dried)
  • Salt and black pepper, to taste
  • 1/4 cup dry white apple vinegar (optional)
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • 1 teaspoon Dijon mustard (optional)
  • 2 large eggs, divided
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a skillet over medium heat, melt butter and olive oil. Sauté onion until soft (about 5 minutes).
  3. Add garlic and mushrooms; cook until browned (about 8 minutes). Season with thyme, salt, pepper, and apple vinegar if using.
  4. Remove from heat; stir in cream cheese and cheeses until combined. Let cool slightly before adding one beaten egg.
  5. Unroll puff pastry on a floured surface; cut diagonal strips on each side while leaving the center intact.
  6. Spread filling down the center; fold ends first before braiding the strips over the filling.
  7. Brush with remaining beaten egg and bake for 20–22 minutes until golden brown.
  8. Garnish with parsley before serving warm.
