  • 1 pound chicken sausage (mild or hot)
  • 5 tablespoons unsalted butter (divided)
  • 21/4 cups mirepoix (diced carrots, celery, and yellow onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 3 cups milk
  • 2 cups shredded extra-sharp Cheddar cheese

Instructions

  1. In a large pot over medium-high heat, cook the chicken sausage until browned. Transfer to a plate.
  2. In the same pot, melt 1 tablespoon of butter and sauté mirepoix for about 5–7 minutes until softened. Add minced garlic and cook for another 30 seconds.
  3. Stir in chopped potatoes, dried herbs, salt, pepper, and chicken stock. Bring to a boil; then cover and simmer for about 15–20 minutes until potatoes are tender.
  4. In a separate pot, melt 4 tablespoons of butter to create a roux with flour. Gradually whisk in milk until smooth; stir in heavy cream.
  5. Combine the creamy mixture with the soup pot and stir in shredded cheese until melted. Return cooked sausage to the pot.
  6. Serve warm with bread if desired.
