  • 1 cup unsweetened shredded coconut (divided)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon vanilla extract
  • 1 Tablespoon almond butter (optional)
  • 2 Tablespoons chocolate chips or dark chocolate pieces (divided)

Instructions

  1. Preheat oven to 400°F. Spread shredded coconut on a baking sheet and toast until golden, stirring halfway through.
  2. In a food processor, blend pitted dates, almond butter (if using), 2/3 cup toasted coconut, 1 tablespoon chocolate chips, sea salt, and vanilla extract until it forms a dough.
