  • 170g pumpkin puree
  • 1 tbsp maple syrup (optional)
  • ½ tsp vanilla extract
  • 200g all-purpose flour
  • 2 tsp baking powder
  • 3 tsp pumpkin spice
  • 100g powdered sugar
  • 2 tbsp milk (as needed)

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and flour a small springform pan.
  2. In a large bowl, beat together the eggs and brown sugar until light and fluffy. Add in coconut oil, pumpkin puree, vanilla extract, and optional maple syrup; mix gently.
  3. In another bowl, whisk together flour, baking powder, and pumpkin spice. Gradually fold into the wet mixture until just combined; avoid overmixing.
  4. Pour batter into the prepared pan and bake for about 25 minutes. Cover loosely with foil and continue baking for an additional 20 minutes or until a toothpick comes out clean yet moist.
  5. Allow to cool slightly before removing from the pan. For the glaze, sift powdered sugar and mix with milk and maple syrup until smooth; drizzle over cooled cake.
