Ingredients

  • 2 double shots of blonde espresso
  • 12 cups ice cubes
  • Cold oat milk, to taste
  • ¼ cup packed light brown sugar
  • 2 cinnamon sticks or 1 ½ tsp pumpkin pie spice
  • 2 tbsp pumpkin puree
  • ½ cup warm water
  • 1 tsp vanilla extract

Instructions

  1. In a saucepan, whisk together brown sugar, pumpkin puree, cinnamon (or pumpkin pie spice), and warm water until combined.
  2. Simmer on low heat for 2-3 minutes until slightly thickened, then remove from heat.
  3. Stir in vanilla extract and optional maple extract. Let cool.
  4. In a jar, combine one double shot of espresso, 1-2 tablespoons of syrup, and ice cubes. Seal and shake vigorously for 20-30 seconds.
  5. Pour into a glass, adding more ice if desired and top with oat milk. Dust with additional pumpkin pie spice before serving.
