  • 1 ½ cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups pumpkin puree
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a bowl, mix flour, oats, 1 cup brown sugar, baking soda, and salt. Stir in melted butter until combined.
  3. Press two-thirds of the crumble mixture into the bottom of the prepared dish.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, remaining brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Pour the filling over the crumble base and spread evenly.
  6. Sprinkle the remaining crumble mixture on top and add chopped walnuts if desired.
  7. Bake for 30-35 minutes until golden brown and set in the middle.
  8. Allow cooling completely before slicing into squares.
