  • 1/2 cup pumpkin puree
  • 1/4 cup + 1 tablespoon milk
  • 1/4 cup unsalted butter (melted)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar (for topping)
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a casserole dish.
  2. In a bowl, sift together all-purpose flour, whole wheat pastry flour, baking powder, salt, sugar, and spices.
  3. In another bowl, mix pumpkin puree, milk, melted butter, and vanilla extract until smooth.
  4. Combine wet and dry ingredients gently; spread into the prepared dish.
  5. Mix topping ingredients (sugar, brown sugar, cinnamon, pecans) and sprinkle evenly over the batter.
  6. Pour hot water gently over the topping without mixing.
