  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 1/2 cups pumpkin puree
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/4 cup milk
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 3/4 teaspoon salt
  • For the Cinnamon Sugar Topping: 1/2 cup granulated sugar, 1 teaspoon cinnamon, 1 tablespoon unsalted butter, melted
  • For the Maple Cream Cheese Filling: 3/4 cup heavy cream, 8 ounces cream cheese, softened, 1/4 cup maple syrup (to taste)

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, whisk together vegetable oil, granulated sugar, brown sugar, pumpkin puree, vanilla extract, eggs, and milk until smooth.
  2. In a separate bowl, combine all-purpose flour, baking soda, cinnamon, and salt. Gradually fold this dry mixture into the wet ingredients until just combined.
  3. Grease or line a muffin tin and fill each cup three-quarters full with batter.
  4. Mix granulated sugar and cinnamon for the topping; sprinkle over muffin batter before baking.
  5. Bake for 20-24 minutes until muffins spring back when pressed lightly. Allow to cool before filling.
  6. For the filling: Beat heavy cream until stiff peaks form; beat cream cheese until smooth. Fold whipped cream and maple syrup into cream cheese mixture.
  7. Cut small cones from cooled muffins' centers and fill with maple cream cheese mixture.
