  • 600 g Hokkaido pumpkin flesh
  • 300 g day-old bread
  • 1 onion
  • ½ bunch parsley
  • 2 tbsp pumpkin seeds
  • 1 tbsp butter
  • 2 eggs (size M)
  • Salt
  • Pepper
  • 4 tbsp flour (add more if needed)
  • 2 tbsp semolina
  • 40 g Parmesan

Instructions

  1. Prepare the Pumpkin: Wash and cube the Hokkaido pumpkin, then cook in salted water until tender.
  2. Toast Bread and Seeds: Dice the day-old bread, chop onion and parsley, then toast pumpkin seeds until fragrant.
  3. Combine Ingredients: Mix cooled pumpkin with bread, sautéed onions, eggs, parsley, flour, and semolina in a bowl.
  4. Shape Dumplings: Form about 12 dumplings using wet hands; simmer in salted water until they float.
  5. Cook and Serve: Drain the dumplings and optionally pan-fry for a golden crust before serving with grated Parmesan.
