  • 2 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • ½ cup breadcrumbs (preferably panko)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 12 oz pasta (spaghetti or penne)
  • ½ cup basil pesto
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Season chicken breasts with salt, pepper, garlic powder, and onion powder. Coat each breast with a mixture of breadcrumbs and grated Parmesan.
  2. Heat olive oil in a skillet over medium heat. Fry chicken until golden brown and cooked through (about 5-6 minutes per side).
  3. In a pot of boiling salted water, cook pasta according to package instructions until al dente. Drain and return to the pot.
  4. Stir in basil pesto and lemon juice (if using) into the drained pasta until well coated.
