  • 2 cups cream cheese, at room temperature
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/2 cup sour cream, at room temperature
  • 2 teaspoons pure vanilla extract
  • 4 large eggs, at room temperature
  • 5 medium peaches
  • 4 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Prepare peaches by peeling, pitting, and slicing them, then toss with sugar and cinnamon.
  2. Make streusel topping by mixing flour, brown sugar, cinnamon, and melted butter until crumbly.
  3. Combine graham cracker crumbs with sugar, cinnamon, and melted butter; press into the bottom of a springform pan.
  4. Beat cream cheese, granulated sugar, salt, flour, sour cream, vanilla extract, and eggs until smooth; pour half over crust.
  5. Layer half the peach filling and half the streusel topping; repeat layers.
  6. Bake until set but slightly jiggly in the center; cool before refrigerating for several hours or overnight.
