  • 3/4 cup fresh orange juice
  • 2 teaspoons minced garlic
  • 1 tablespoon fresh grated ginger
  • 23 tablespoons honey
  • 1 tablespoon rice vinegar
  • 3 tablespoons low sodium soy sauce or tamari
  • 12 tablespoons orange zest
  • 1/2 teaspoon red pepper flakes
  • Cooked white or brown rice and broccoli for serving

Instructions

  1. In a medium bowl, whisk together the orange juice, minced garlic, grated ginger, honey, rice vinegar, soy sauce, and red pepper flakes.
  2. Add the salmon fillets to the marinade and let them soak for about 15 minutes.
  3. Heat oil in a skillet over medium-low heat and sauté additional minced garlic and ginger until fragrant.
  4. Add the marinated salmon to the skillet and cook each side for about 3-4 minutes until golden brown.
  5. In a small saucepan, bring any leftover marinade to a boil. Mix cornstarch with water to create a slurry and stir into the boiling sauce until thickened.
  6. Pour the thickened sauce over the cooked salmon and simmer briefly before serving over rice with steamed broccoli on the side.
