  • 2 tablespoons olive oil
  • 1½ cups long-grain white rice
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 1 cup nacho cheese sauce
  • 2¼ cups chicken broth
  • 1½ cups shredded cheddar or Mexican blend cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken, garlic powder, onion powder, chili powder, cumin, salt, and pepper. Sauté for 5–6 minutes until chicken is mostly cooked through.
  2. Stir in uncooked rice and Rotel (with juices). Cook for 1–2 minutes to toast the rice slightly.
  3. Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes until rice is tender and liquid is absorbed.
  4. Stir in nacho cheese sauce and one cup of shredded cheese until melted and creamy.
  5. Sprinkle remaining cheese on top, cover for another 5 minutes until melted. Serve warm with optional toppings like cilantro or diced avocado.
