  • 1.5 pounds shrimp, peeled and deveined
  • 4 cups low-sodium chicken broth
  • ½ cup white apple vinegar (optional)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • Juice and zest of 1 lemon
  • Fresh parsley, chopped (for garnish)
  • Optional: red pepper flakes, salt, and black pepper

Instructions

  1. Heat olive oil and butter in a large oven-safe skillet over medium heat. Sauté diced onion until softened, about 5 minutes. Add minced garlic and red pepper flakes (if desired) and cook for another minute.
  2. Stir in orzo pasta and toast for 1-2 minutes before adding white apple vinegar (if using). Deglaze the pan for added flavor.
  3. Pour in chicken broth along with lemon zest, salt, and pepper; bring to a boil then reduce heat to low. Cover and simmer for about 10-12 minutes.
  4. Uncover, stir in shrimp, cover again, and cook until shrimp turn pink, about 3-5 minutes.
  5. Remove from heat and stir in Parmesan cheese and heavy cream until smooth.
  6. Finish with lemon juice and fresh parsley; adjust seasoning if needed.
  7. Serve hot with extra Parmesan on top.
