  • 1 lb boneless skinless chicken breast
  • 2 cups mushrooms (cut in half)
  • 1 clove garlic (minced)
  • 1 ½ cups dry white grape juice
  • 2 tbs butter
  • 2 tbs olive oil
  • ½ cup heavy cream
  • â…“ cup shredded asiago cheese
  • Fresh thyme sprigs

Instructions

  1. Pound the chicken breasts until about ¼-inch thick for even cooking.
  2. In a skillet, heat butter and olive oil over medium heat. Dredge chicken in seasoned flour, then sauté until golden brown on both sides (about 5 minutes each side). Remove and set aside.
  3. In the same skillet, add remaining olive oil and cook mushrooms and garlic until browned.
  4. Deglaze the pan with white grape juice, scraping up browned bits.
  5. Add fresh thyme and return chicken to the skillet. Bring to a boil, then simmer covered for 15-20 minutes.
  6. Remove chicken again, stir in heavy cream and asiago cheese until melted. Return chicken to sauce to warm through.
  7. Serve garnished with thyme.
