- 1 lb boneless skinless chicken breast
- 2 cups mushrooms (cut in half)
- 1 clove garlic (minced)
- 1 ½ cups dry white grape juice
- 2 tbs butter
- 2 tbs olive oil
- ½ cup heavy cream
- â…“ cup shredded asiago cheese
- Fresh thyme sprigs
- Pound the chicken breasts until about ¼-inch thick for even cooking.
- In a skillet, heat butter and olive oil over medium heat. Dredge chicken in seasoned flour, then sauté until golden brown on both sides (about 5 minutes each side). Remove and set aside.
- In the same skillet, add remaining olive oil and cook mushrooms and garlic until browned.
- Deglaze the pan with white grape juice, scraping up browned bits.
- Add fresh thyme and return chicken to the skillet. Bring to a boil, then simmer covered for 15-20 minutes.
- Remove chicken again, stir in heavy cream and asiago cheese until melted. Return chicken to sauce to warm through.
- Serve garnished with thyme.
