  • 1 bell pepper, chopped (red or green)
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • Juice of half a lemon

Instructions

  1. In a large skillet over medium heat, heat olive oil. Add ground chicken; cook until browned (6-8 minutes), breaking apart as it cooks.
  2. Stir in chopped onion and minced garlic; sauté until the onion is translucent (2-3 minutes).
  3. Add chopped bell pepper, oregano, smoked paprika, cumin, salt, and pepper; cook for another 3-4 minutes.
  4. Mix in cherry tomatoes and Kalamata olives; cook until tomatoes burst and release juices (about 5 minutes).
  5. Sprinkle feta cheese over the mixture; allow it to melt slightly.
  6. Remove from heat; stir in fresh parsley and lemon juice before serving warm.
