  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tablespoon fresh thyme
  • 1 tablespoon honey
  • 1 tablespoon olive oil for drizzling

Instructions

  1. In a medium bowl, mix warm water, sugar, and yeast; let sit until frothy (about 5 minutes).
  2. In a large bowl, combine flour and salt. Add the yeast mixture and olive oil; stir until a dough forms. Knead on a floured surface for about 8-10 minutes.
  3. Place kneaded dough in an oiled bowl, cover with a towel, and let rise in a warm area for about 1 to 1.5 hours.
  4. Preheat oven to 475°F (245°C) while preparing the baking surface.
  5. Roll out the dough into a thin round shape on a floured surface.
  6. Mix ricotta, mozzarella, Parmesan, lemon zest, and juice; spread over the rolled-out dough.
