  • 4 boneless skinless chicken breasts
  • Salt and pepper (for seasoning)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice of 1 lemon
  • Zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves

Instructions

  1. Pound the chicken breasts to an even thickness. Season with salt and pepper.
  2. Heat olive oil in a large sauté pan over medium-high heat. Cook chicken for about 3-4 minutes per side until golden brown and fully cooked. Remove from the pan and set aside.
  3. In the same pan, add minced garlic and sauté until fragrant. Pour in chicken broth, lemon juice, and zest; scrape up browned bits. Bring to a gentle boil, then lower the heat.
  4. Stir in heavy cream and simmer until slightly thickened. Add spinach and cook until wilted. Return chicken to the pan, spoon sauce over it, sprinkle with Parmesan cheese, cover for a couple of minutes.
  5. Serve garnished with thinly sliced lemons and extra Parmesan cheese.
