  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 6 medium flour tortillas
  • 1 can refried beans (16 oz)
  • 1 can red enchilada sauce (10 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • Fresh toppings: diced Roma tomato, green onion, sliced black olives

Instructions

  1. Preheat the oven to 375°F. Lightly spray two baking sheets and arrange three tortillas on each.
  2. Cook ground beef in a skillet over medium-high heat until browned; drain excess grease.
  3. Stir in taco seasoning and water; bring to boil then simmer for about 10 minutes.
  4. Warm refried beans in the microwave and spread over one tortilla.
  5. Layer seasoned beef on top of the beans, followed by another tortilla.
  6. Spread enchilada sauce on that tortilla, sprinkle with cheeses and top with fresh vegetables.
  7. Repeat layering process until all ingredients are used.
  8. Bake assembled pizzas for about 5 minutes until cheese is bubbly.
