  • 2.5 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tbsp unsalted butter or 3 tbsp olive oil + 1 tbsp butter
  • 1 large yellow onion, finely chopped
  • 56 cloves garlic, minced
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk
  • ½ cup heavy cream (optional)
  • 2 cups sharp cheddar cheese, shredded
  • Fresh parsley, chives, and thyme
  • Salt and pepper to taste

Instructions

  1. Peel and cube the Yukon Gold potatoes into uniform pieces. Rinse under cold water to remove excess starch.
  2. In a large pot over medium heat, melt the butter (or olive oil/butter combo). Sauté chopped onion for 5-7 minutes until softened.
  3. Add minced garlic; cook for an additional minute until fragrant.
  4. Stir in flour to create a roux; cook for 1-2 minutes.
  5. Gradually whisk in the broth while scraping up any flavorful bits from the bottom. Bring to a gentle simmer.
  6. Add potato cubes; cover and simmer on medium-low for about 15-20 minutes until fork-tender.
  7. Blend half of the soup until smooth and return it to the pot.
  8. Lower heat; stir in milk and cream (if using), along with fresh herbs. Heat through gently.
  9. Remove from heat; gradually stir in shredded cheddar until melted and smooth.
  10. Season with salt, black pepper, and optional cayenne before serving.
