  • 4 tablespoons unsalted butter or 3 tablespoons olive oil + 1 tablespoon butter
  • 1 large yellow onion, finely chopped
  • 56 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Pinch of cayenne pepper or smoked paprika (optional)

Instructions

  1. Peel and cube potatoes; rinse under cold water.
  2. In a large pot, heat butter (or olive oil/butter combo) over medium heat. Sauté chopped onion until translucent.
  3. Add minced garlic; cook until fragrant.
  4. Stir in flour to create a roux; cook for one minute.
  5. Gradually whisk in broth; bring to a simmer.
  6. Add potatoes; cover and cook until tender (about 15 minutes).
  7. Blend half the soup until smooth; return to pot.
