  • 1 medium spaghetti squash
  • 1 tbsp olive oil
  • ½ cup diced onion
  • 2 cloves garlic (minced)
  • ½ cup plain Greek yogurt
  • 1½ cups shredded sharp cheddar cheese (divided)
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Preheat your oven to 400°F (205°C).
  2. Halve the spaghetti squash lengthwise and scoop out the seeds. Brush with olive oil and roast face-down on a baking sheet for about 35–40 minutes until tender.
  3. Sauté diced onions in olive oil over medium heat for about five minutes, then add minced garlic and cook for another minute.
  4. Once the squash is cool enough to handle, shred it into strands using a fork.
  5. In a bowl, combine shredded squash, sautéed onions and garlic, Greek yogurt, one cup of shredded cheese, salt, pepper, and any optional spices.
  6. Transfer to a greased casserole dish and top with remaining cheese. Bake at 375°F (190°C) for 20–25 minutes until bubbly and golden.
