  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 1 cup chocolate chips (for topping)
  • 1 tsp coconut oil (for topping)

Instructions

  1. In a bowl, combine almond flour and salt. Mix in cashew butter, maple syrup, melted coconut oil, and vanilla extract until well blended. Gently fold in chocolate chips.
  2. Line a cutting board with parchment paper and transfer the mixture onto it. Press down firmly to flatten to about 1/2-inch thickness.
  3. Melt remaining chocolate chips with coconut oil in intervals in the microwave until smooth. Pour over the flattened cookie dough and spread evenly.
  4. Optional: Sprinkle flaky sea salt on top for added flavor.
  5. Freeze for about 10 minutes to set, then chop into pieces and enjoy!
