  • 1 1/2 cups all-purpose white flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/4 cups ripe bananas (mashed)
  • 1 (8-ounce) can crushed pineapple with juice
  • 1/2 cup + 1 tbsp organic sunflower oil
  • 1/2 cup macadamia nuts (chopped)
  • 1/2 cup unsweetened coconut flakes

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Dry roast the macadamia nuts in a skillet until slightly browned.
  3. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, combine the eggs, vanilla extract, mashed bananas, crushed pineapple (with juice), and oil.
  5. Gently mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the roasted macadamia nuts and coconut flakes.
  7. Pour the batter into the prepared loaf pan and bake for about 55-65 minutes or until a knife comes out clean.
  8. Allow cooling completely before slicing.
