  • 2 lbs beef chuck, cubed
  • 3 tbsp olive oil
  • 1 onion, diced
  • 2 ribs celery, diced
  • 4 carrots, diced
  • 3 garlic cloves, minced
  • ¾ cup dry apple vinegar
  • 6 cups low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 3 sprigs fresh thyme
  • 1 cup pearled barley
  • Salt and pepper to taste
  • ¼ cup parsley, minced

Instructions

  1. Season cubed beef chuck with salt and pepper. In a large pot over medium-high heat, sear the beef in olive oil until browned on all sides. Set aside.
  2. In the same pot, sauté onion, celery, and carrots until softened. Add minced garlic and cook for another minute.
  3. Deglaze the pot with dry apple vinegar and let it reduce by half.
  4. Add in low-sodium beef broth, Worcestershire sauce, thyme, and seared beef. Bring to a simmer for about 45 minutes.
  5. Stir in pearled barley and simmer uncovered for another 45-60 minutes until tender.
  6. Adjust consistency with more broth if needed before serving; stir in minced parsley.
