Ingredients

Scale
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 cup Reese’s Pieces

Instructions

  1. Prepare the cheesecake filling by mixing cream cheese, powdered sugar, and vanilla extract until smooth. Scoop small dollops onto a baking sheet and freeze for at least an hour.
  2. For the cookie dough, beat together softened butter, brown sugar, and granulated sugar until fluffy. Add in the egg and another splash of vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually combine with wet ingredients, then fold in chocolate chips and Reese’s Pieces.
  4. Assemble cookies by flattening two tablespoons of dough, placing a frozen cheesecake dollop in the center, then sealing with more dough.
  5. Bake at 350°F (175°C) for 12-14 minutes until edges are golden but centers are still soft.
