  • 2½ tablespoons salted butter

  • Freshly cracked black pepper, to taste
  • 2 pounds yellow onion, halved and thinly sliced
  • 1½ tablespoons thyme, finely chopped
  • 6 cloves garlic, minced
  • ½ cup dry white grape juice
  • 2½ teaspoons dijon mustard
  • 2½ tablespoons all-purpose flour
  • 1 teaspoon worcestershire sauce
  • 1 large bay leaf
  • 2½ cups beef stock, low sodium
  • 24 ounces gnocchi (store bought)
  • 1½ cups gruyere cheese, freshly grated
  • ½ cup parmesan cheese, freshly grated

Instructions

  1. In a skillet over medium heat, heat olive oil and butter. Add sliced onions and cook for 45-60 minutes until caramelized.
  2. Stir in thyme and garlic; cook for 2 more minutes.
  3. Deglaze the pan with white grape juice, simmering until reduced by half.
  4. Mix in flour, then add dijon mustard and worcestershire sauce until combined.
  5. Pour in beef stock and add the bay leaf; simmer for 6-7 minutes.
  6. Cook gnocchi in salted boiling water until they float; drain.
  7. Combine gnocchi with the sauce, top with cheeses, and broil until bubbly (3-5 minutes).
  8. Serve garnished with fresh thyme.
