  • 6 cloves garlic, chopped
  • 3 anchovy fillets
  • â…“ cup dry white grape juice
  • 1 (28-ounce) can crushed tomatoes
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ cup olives, halved and pitted
  • 2 tablespoons capers
  • 1½ pounds white fish (such as cod or tilapia)
  • Sea salt to taste

Instructions

  1. Preheat your oven to 400°F.
  2. In a large ovenproof skillet, melt the butter over medium heat. Add garlic and anchovy fillets; cook until fragrant.
  3. Stir in dry white grape juice; reduce for about four minutes.
  4. Add crushed tomatoes, oregano, and thyme; simmer for ten minutes.
  5. Mix in olives and capers evenly throughout the sauce.
  6. Season fish with sea salt and place gently into the skillet with the sauce. Bake for 8–10 minutes until fish flakes easily with a fork.
  7. Serve garnished with fresh herbs if desired.
