- 6 cloves garlic, chopped
- 3 anchovy fillets
- â…“ cup dry white grape juice
- 1 (28-ounce) can crushed tomatoes
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ cup olives, halved and pitted
- 2 tablespoons capers
- 1½ pounds white fish (such as cod or tilapia)
- Sea salt to taste
- Preheat your oven to 400°F.
- In a large ovenproof skillet, melt the butter over medium heat. Add garlic and anchovy fillets; cook until fragrant.
- Stir in dry white grape juice; reduce for about four minutes.
- Add crushed tomatoes, oregano, and thyme; simmer for ten minutes.
- Mix in olives and capers evenly throughout the sauce.
- Season fish with sea salt and place gently into the skillet with the sauce. Bake for 8–10 minutes until fish flakes easily with a fork.
- Serve garnished with fresh herbs if desired.
