  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt, plus more to taste
  • Freshly ground black pepper
  • ½ cup Gruyere cheese (or additional cheddar)
  • ¼ cup grated Parmesan cheese

Instructions

  1. 1. Preheat your oven to 375°F.
  2. 2. Grease a baking dish with nonstick spray or butter.
  3. 3. Layer sliced potatoes in the dish, interspersing onion slices.
  4. 4. In a saucepan, melt butter over medium heat, whisk in flour, then gradually add almond milk until smooth.
