  • ½ cup flour
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 eggs
  • 2 tablespoons water
  • ⅔ cup shredded sweetened coconut flakes
  • ⅔ cup panko bread crumbs
  • Oil for frying
  • Sea salt flakes (for garnish, optional)
  • Sweet chili sauce (for serving)

Instructions

  1. Prepare four shallow bowls: one with flour, chili powder, salt, and pepper; a second with whisked eggs and water; a third with coconut flakes; and a fourth with panko breadcrumbs.
  2. Coat each chicken tender in seasoned flour, dip in egg wash, roll in coconut, then finish with panko.
  3. Heat oil in a skillet over medium heat. Fry chicken tenders for 2-3 minutes per side until golden brown.
  4. Drain on a wire rack and sprinkle with sea salt if desired.
