  • ½ cup cornstarch
  • ¼ teaspoon kosher salt
  • 3½ cups whole milk (warm)
  • 6 large egg yolks (room temperature)
  • 1 vanilla bean (or 2 teaspoons vanilla bean paste)
  • 4 tablespoons unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 400°F (200°C). Roll out puff pastry sheets slightly, prick with a fork, and bake on parchment-lined trays for 35–45 minutes until golden. Cool completely.
  2. Trim edges to fit into an 8×8-inch pan.
  3. Whisk together sugar, cornstarch, and salt in a saucepan; add egg yolks and mix well.
  4. In another saucepan, warm milk until steaming but not boiling.
  5. Gradually whisk warm milk into the egg mixture to temper; then return to heat and cook while whisking until thickened (5–7 minutes).
  6. Stir in vanilla seeds and cold butter until melted.
  7. Line the pan with foil, place one pastry layer at the bottom, pour custard over it, top with another pastry layer, cover tightly, and refrigerate for at least four hours or overnight.
  8. Once chilled, cut into squares, dust with powdered sugar, and serve.
