Ingredients

Scale
  • 1 pound ground beef
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 4 cups chicken or beef broth
  • 1 can diced tomatoes
  • 1 cup small pasta (like ditalini)
  • 1/2 cup heavy cream
  • Fresh spinach or basil

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into meatballs about one inch in diameter.
  2. Heat olive oil in a large pot over medium heat and brown the meatballs on all sides (about 5-7 minutes). Set aside.
  3. Sauté diced onion for 3-4 minutes until translucent; add garlic and celery and cook until fragrant.
  4. Add diced tomatoes and broth to the pot; simmer for 5 minutes.
  5. Bring the soup to a gentle boil; stir in pasta and meatballs. Cook until pasta is tender (8-10 minutes).
  6. Reduce heat and stir in heavy cream and chopped greens; mix well.
  7. Serve hot with extra Parmesan cheese and fresh herbs.
