  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 9 oz baby button mushrooms (sliced)
  • 3/4 cup heavy cream (room temperature)
  • 3/4 cup chicken stock
  • 1 oz freshly grated Parmesan cheese
  • 2 large cloves garlic (finely diced)
  • Fresh parsley and chives (for garnish)
  • Lemon juice (to taste)

Instructions

  1. Slice chicken breasts into four pieces each for even cooking.
  2. Dredge the chicken in a mixture of flour, garlic powder, salt, and black pepper.
  3. In a pan over medium-high heat, melt olive oil and butter; add the chicken and cook until golden brown on both sides.
  4. Remove chicken from the pan and add sliced mushrooms; sauté until golden.
  5. Stir in garlic, followed by chicken stock and cream; simmer until slightly thickened.
  6. Mix in Parmesan cheese and lemon juice; season with salt and pepper to taste.
  7. Return the chicken to the sauce, coating it thoroughly before serving.
