  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp chili powder
  • ½ tsp kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • â…“ cup white apple vinegar
  • 1 tbsp fresh lime juice
  • ¼ tsp garlic powder

Instructions

  1. Prepare the black beans, black-eyed peas, and corn by draining and rinsing them thoroughly.
  2. In a large bowl, combine the beans, corn, cilantro, red bell pepper, orange bell pepper, and red onion.
  3. In a separate bowl, whisk together chili powder, kosher salt, sugar, olive oil, vinegar, lime juice, and garlic powder until well combined.
