  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed
  • 2 boxes instant coconut cream pudding mix
  • 3 cups half-and-half
  • Additional Cool Whip and toasted shredded coconut for topping

Instructions

  1. Prepare the crust by mixing graham cracker crumbs and sugar in a bowl. Stir in melted butter until moistened. Press into the bottom of a 9×13-inch dish.
  2. For the cream cheese layer, beat softened cream cheese and powdered sugar until smooth. Add coconut extract and fold in half of the Cool Whip until combined.
  3. In another bowl, whisk pudding mix with half-and-half until thickened. Spread over the cream cheese layer.
  4. Top with remaining Cool Whip and sprinkle toasted shredded coconut over it. Cover and refrigerate for at least six hours or overnight before serving.
