  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two greased 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream together the softened butter and sugar until fluffy; add eggs one at a time along with vanilla and coconut extracts.
  4. Gradually mix in dry ingredients alternating with coconut milk until smooth.
  5. Pour into prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Let cool completely.
  6. For frosting, beat cream cheese with powdered sugar until smooth; whip heavy cream separately until stiff peaks form and fold into the cream cheese mixture.
  7. Layer cakes with frosting in between and cover the top and sides; press shredded coconut onto the frosting.
  8. Chill for at least an hour before serving.
