  • 1 ½ lbs lean ground beef
  • 1 cup diced onion
  • ¾ cup bread crumbs
  • ⅓ cup broth or water
  • 2 eggs
  • 1 tsp tomato paste
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ¾ cup ketchup
  • 1 Tbsp white vinegar

Instructions

  1. Preheat your oven to 350°F.
  2. In a large bowl, combine the ground beef, diced onion, bread crumbs, broth, eggs, garlic powder, tomato paste, salt, and pepper. Mix gently until just combined.
  3. Shape the mixture into a loaf and place it in a greased loaf pan or on a lined baking sheet.
  4. Bake uncovered for about 40 minutes.
  5. Mix ketchup and vinegar in a small bowl. After 40 minutes of baking, spread the glaze over the meatloaf and return it to the oven for an additional 10 minutes.
  6. Let rest for 10 minutes before slicing.
