  • ¼ cup milk
  • 2 egg yolks
  • ½ cup grated pecorino Romano cheese (or Parmesan)
  • 2 garlic cloves
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 pound ground beef chuck
  • 1 pound ground beef
  • ⅓ cup chopped parsley
  • Olive oil

Instructions

  1. Soak the breadcrumbs in milk for about 5 minutes until soft.
  2. In a bowl, combine soaked breadcrumbs with egg yolks, cheese, garlic, salt, and pepper.
  3. In another bowl, mix ground beef chuck and ground beef with chopped parsley. Gently fold in the breadcrumb mixture until just combined.
