  • 240 ml lukewarm milk
  • 7 g dry baker’s yeast
  • 430 g all-purpose flour
  • 60 g granulated sugar
  • 1 pinch salt
  • 1 egg (room temperature)
  • 70 g melted butter (cooled)
  • 50 g unsweetened cocoa powder
  • 120 g brown sugar
  • 2 tsp ground cinnamon
  • 70 g softened butter
  • 1 tsp vanilla extract
  • 70 g powdered sugar
  • 60 ml heavy cream

Instructions

  1. Activate the yeast by mixing lukewarm milk and yeast in a bowl; let sit for about 5–10 minutes until frothy.
  2. In a stand mixer, combine flour, sugar, cocoa powder, and salt. Add the egg, melted butter, and activated yeast mixture; knead on medium speed for about three minutes until smooth.
  3. Cover the dough and let it rise in a warm place for about 1.5 to 2 hours until doubled in size.
  4. Prepare the filling by mixing brown sugar, cocoa powder, cinnamon, and vanilla.
  5. Roll out dough into a rectangle, spread with softened butter, then sprinkle with filling mixture; roll tightly into a log.
  6. Slice into 9–11 equal pieces, place in a baking dish, and let rise again for another 30–60 minutes.
  7. Preheat oven to 350°F (180°C) and bake for about 20–25 minutes until golden brown.
  8. Once cooled slightly, glaze with powdered sugar, cocoa powder, and heavy cream mixture.
